TO DO AHEAD

One of my regular followers has asked me to provide recipes that can be done ahead so she doesn't have to spend all her time in the kitchen, away from her guests, when she's entertaining. As a single man who often entertains, I share this objective and so most of my recipes can be prepared at least a little ahead. When I lived in a house, my kitchen was a separate room from the rest of the house so I could hide what I was doing, and the mess, from my guests. Now that I'm in an apartment where the kitchen is a part of the living room and dining room, I can be with my guests all the time but I can't hide the mess. This makes doing things ahead even more important.

Most of the recipes already provided on this blog can be prepared at least partially ahead - stews, for instance, that are even better when cooked and held, to be served the next day; or Mac and Cheese, which can be prepared ahead and saved, covered and chilled, to be cooked just when ready. I won't go back and change any of the recipes already given on Phil's Favorite Food, but I'll scan them all and list here (on another post) which ones can be prepared and held. And going forward, I'll add a note at the end of each recipe called TO DO AHEAD that will provide that information. I hope that helps, me, as well as you.
