HOW TO SEGMENT FRUIT

Sure. You can use your mother's special grapefruit spoons and dig the fruit out like you did when you were a kid. Or you can use this method that goes faster and is easier. Use it with any segmented fruit, like oranges, lemons or grapefruit.

Start by making a horizontal cut at each end of the fruit, exposing the flesh inside. Place the fruit on one of the cut ends and using a sharp knife, cut away the peel in downward strokes from top to bottom, following the curve of the fruit. Take as little of the flesh as possible but be sure to remove all the bitter white pith. When the peel has all been removed, take the fruit in one hand and using a sharp knife, cut away each segment, leaving the divisions of the segments between them. Be careful not to cut too deep; you may cut your hand. It's best to do this over a bowl, especially if your recipe calls for using the juice.
