A dear friend, Russ, recently brought to a kind of indoor picnic this colorful and delicious salad, made with watermelon, feta cheese, blueberries and chocolate mint. Since it was the Fourth of July, this was a great salad to celebrate because it was red, white, and blue.
To duplicate Russ' salad, I would cut a seedless watermelon into cubes about 1 1/2 inches square. The size of the watermelon and quantity of cubes depends on the number of people you're feeding. If you want to have chunks of feta, cut it to about the same size, but you could also crumble it, as Russ did. Then add some mint - Russ just happened to have chocolate mint in his garden, but you could use regular mint - torn into small pieces, just enough for color and some taste. Then top the whole thing off with a splash of fresh blueberries. You can depend on the watermelon to provide some juice, as Russ did, or you can add a little balsamic vinegar or some white rum.. Toss the whole thing gently and allow the salad to chill in the refrigerator for a couple of hours before serving it. I guarantee it will be a hit!
