When I want to serve olives with cocktails, I usually buy them at my grocery store. But this recipe imparts a little different flavor I can call my own. Two cloves of garlic is a little much for my taste so I only use one. These will keep, covered and chilled, indefinitely.
MARINATED OLIVES
serves 4, with cocktails
2 C assorted olives, pitted or not
2 cloves garlic, peeled and lightly crushed
1 T extra virgin olive oil
1 t fresh rosemary leaves
1/2 lemon, cut in half and segmented like grapefruit.
Toss all ingredients together in a bowl. Marinate for an hour or longer at room temperature. Refrigerate overnight, if not using immediately. Remove from the refrigerator an hour or two before serving to allow the olives to come to room temperature..
